This Month's Watkins Recipe:
Beef Kabobs

Ingredients
Ingredients 2 pounds/908 g round steak
1-1/2 tsp/7.5 ml Mustard - Dry
1 tsp/5 ml Ginger
1 - 1/2 tsp/7.5 mL Seasoning Salt
6 tbsp/90 ml soy sauce
3 tbsp/45 ml Original Grapeseed Oil
3 tbsp/45 ml lemon juice
16 cherry tomatoes
16 wedges of green pepper
16 whole fresh mushrooms

Directions
Trim any fat from meat and cut into 1-1/2-inch/4-cm chunks. Combine dry mustard and next four ingredients; mix well. (A zip-top plastic bag works great for this.) Add meat and mix well. Refrigerate and allow to marinate for at least 4 hours. Thread marinated meat, tomatoes, green pepper and mushrooms alternately onto wooden or metal skewers. Brush with marinade and grill or broil 4 inches/10 cm from heat source. Grill 5 minutes on first side. Turn, brush with marinade and grill or broil until meat is done.
Makes 8 servings.
Note from Kitchen: This recipe is also great with skinless, boneless chicken breast.

Citrus & Black Bean Salsa
Citrus & Black Bean Salsa

Ingredients
1 large tomato, diced
1 red bell pepper, diced
1 green bell pepper, diced
1/3 cup/80 mL red onion, finely chopped
1 small bunch scallions, chopped
1 tsp/5 mL Cumin
1 tsp/5 mL Garlic Flakes
1 tbsp/15 mL Cilantro
1 tbsp/15 mL Salsa & Sour Cream Snack & Dip Seasoning
1 tbsp/15 mL Citrus Cilantro Grapeseed Oil
1 (16 oz/454 g) can black beans, drained and rinsed
Freshly-ground Sea Salt to taste
Juice of half a lime (optional)

Combine all ingredients; refrigerate for at least 4 hours before serving.


Homemade Root Beer Float
Start by making a concentrated root beer syrup:

Ingredients
1-3/4 cups/425 mL sugar
2-1/4 cups/560 mL water
2 tbsp/30 mL Root Beer Extract

Directions

Root Beer Syrup: Combine sugar and water in small saucepan; heat and stir until mixture starts to boil. Remove from heat and cool to room temperature; add Root Beer Flavor and mix thoroughly. Place in well-sealed container and keep in refrigerator.

Root Beer: Place 1/3 cup/80 mL of the syrup into a glass. Add 5 fl. oz./150 mL of club soda or sparkling water. Fill glass with ice. Enjoy!

Root Beer Float: Float a scoop of vanilla ice cream in a mug of root beer.
